Great "food" for thought! I am a Smithey lover and debating between the 7.5 qt Dutch Oven and the VitaClay Nourishing Pot. Ultimately time is not as big a factor for me as I am retired. What I am most focused on is flavor development and versatility of one vs the other. I'd love your thoughts on this!
